Tuesday Night Tradition: Workout & Dinner with the Neighbors

There’s something special about sharing a meal with good company, and every Tuesday, my neighbors and I have made it a tradition to come together for a workout and a delicious, nourishing dinner. This week’s menu was inspired by what we had on hand—cooked beets, fresh fish, and a shared love for great flavors. One of my neighbors is gluten-free and dairy-free (except for goat cheese!), so I crafted a meal that was both inclusive and incredibly satisfying.

The Menu:

• Almond-Crusted Sole & Tilapia
• Orange Garlic Aioli
• Orange, Cucumber, & Mint Chutney
Beetroot Pasta Sauce with Goat Cheese
This sauce was an absolute showstopper. If you’ve never tried beetroot pasta sauce before, imagine a silky, earthy, slightly sweet sauce that pairs beautifully with the tanginess of goat cheese. I used Nadiya Hussain’s recipe as inspiration, blending roasted beets with garlic, olive oil, a splash of lemon juice and sea salt. We served this over both fresh gluten-free pasta and regular fresh pasta, so everyone could enjoy it their way. The finishing touch? A sprinkle of goat cheese mixed with fresh lemon zest and fresh dill to brighten everything up.

Almond-Crusted Sole & Tilapia
Fish nights are always a win, and this crispy almond-crusted fish was next-level. To create the perfect crust, I mixed almond flour with seasoning and used a flavorful binder made from mayonnaise, Dijon mustard, fresh dill, garlic, and a hint of curry powder. The result? A crunchy, golden-brown crust that locked in the fish’s moisture and added a subtle nuttiness.
Dipping Sauces: Orange Garlic Aioli & Chutney
To complement the fish, I whipped up two vibrant condiments:
1. Orange Garlic Aioli – A creamy, zesty sauce made with fresh orange juice, orange zest, garlic, and salt. It added the perfect balance of citrus and richness.
2. Orange, Cucumber & Mint Chutney – A fresh, cooling chutney with juicy citrus, crisp cucumber, and fragrant mint. It brought a bright contrast to the warm, crispy fish.
The Verdict? A New Favorite!
This meal was an absolute hit—light yet satisfying, full of bold flavors, and perfect for refueling after our workout. I love how our Tuesday tradition brings us together, and I can’t wait to see what we cook up next!
